Stackette Pancakes is a boutique-style pancake pop-up based in North Carolina, serving up hot, fluffy mini stacks loaded with your favorite toppings, drizzles, and a whole lot of love. What started as a dream in the kitchen quickly turned into a traveling pancake experience that brings smiles, sweetness, and serious flavor to every event we attend.

Inspired by the warmth of family baking, the joy of childhood treats, and the energy of local markets, Stackette was created to blend nostalgia with trend, and comfort with creativity. Each stack is made fresh and crafted for photos, flavor, and fun.

Hi, I'm Lexie, a high school biology teacher turned pancake-preneur. I love baking, playing volleyball, and bringing people together.

The name Stackette combines the word “stack” — for the mini pancake stacks and stacks of toppings we serve — with a soft, feminine twist that reflects the elegant yet playful vibe I always dreamed this brand would carry.
